The Food Safety Act 1990 is the major piece of legislation that covers the food chain, right from farmers through to restaurants, shops or any business involved with food. The Food Safety Act 1990 was brought in to:
- Protect the consumer
- Eliminate unhygienic practices
- Give local authorities the power to enforce
- Allow courts to impose penalties if the law is broken
Along with the Food Safety Act 1990, the other important regulations relevant to employers are ‘The Food Safety (General Food Hygiene) Regulations 1995' which specifically:
- Lay down standards for premises, equipment, personal hygiene
- Apply to a wide range of food businesses
- Include two new requirements:
- hazard analysis
- food hygiene training
Under these regulations, anyone who handles food must:
- Avoid exposing food to the risk of contamination
- Report upset stomachs, infected wounds, colds or coughs
- Keep cuts covered with waterproof dressing
- Not smoke or spit in food areas
- Keep themselves and clothing clean when on duty.
If you prepare food at your workplace, your premises must:
- Be registered with the local authority
- Be maintained in good condition, clean, free from waste
- Have an adequate supply of clean water
- Have hot/cold water sinks or means of washing utensils, equipment and food
- Be well lit and ventilated
- Be designed to prevent access by pests
- Have First Aid materials readily available.
